Instructions:
For the salad, you’ll need 6 cups of fresh baby spinach, 1 pint of sliced fresh strawberries, 1/3 cup of toasted sliced almonds, 1/4 of a red onion thinly sliced, and 1/2 cup of crumbled feta cheese. You can also add 1 diced avocado for extra creaminess. To make the dressing, combine 1/4 cup balsamic vinegar, 2 tablespoons honey (or maple syrup), and 1 teaspoon Dijon mustard in a small bowl or jar. While whisking, slowly drizzle in 1/3 cup olive oil until emulsified. Stir in 1 tablespoon of poppy seeds and season with salt and pepper to taste. In a large bowl, gently toss the spinach, strawberries, red onion, almonds, and feta. Add the dressing just before serving and give it another gentle toss. If using avocado, add it last and mix lightly to avoid bruising. Serve immediately and enjoy a refreshing taste of spring!
